I made some Christmas Tree Pancakes for my kids this morning. This is also ok for any adult, especially for all of us who are watching what we eat. This recipe is KETO friendly and it is super simple to make.
Here's what I did: I took my favorite pancake recipe and replaced some ingredients with KETO friendly once.
ELENA'S KETO CHRISTMAS TREE PANCAKES:
1-1.5 cups Coconut or Almond Flour
1/4 tsp salt
1/3 tsp baking soda
1 Table spoon Maple Syrup
1 tsp pure vanilla extract
Around 0.5 - 1 Cup of Whole milk.
EXTRAS: Green food coloring and Christmas Tree cookie cutter
Use Coconut Oil on your pan to fry the pancakes.
Combine all dry ingredients first, then add eggs, vanilla and maple syrup. You can totally skip the syrup if you prefer to stay sugar free. Finally, gradually add the milk, making use the consistency of the batter is somewhat liquid. It is completely up to your liking. I like my pancakes thin, so I add more milk. Experiment with flour and liquid proportions, see what works best for you.
Add green food coloring (just a few drops) to add the green color and start cooking by placing the batter on a hot frying pan greased with coconut oil.
When pancakes develop small bubbles on the surface it is a perfect time to flip them. Once they are ready, place them on a plate and use a cookie cutter to cut our the shapes. Decorate with berries and serve with maple syrup.
